Notice how the 2023 is aligned with electronics engineer but in the real board, the text is off. Also the italics font is lost in the real board.

If I had to take a guess, I think manufacturers parse the gerber text data in their own way and choose their own font. If that is the case, then this is a feature request to bake text as images/bitmaps rather than gerber text objects so that what you see is what you get on the real board.
